Chefs and Head Cooks: Executive Chef: Azzaro Yarmouth LLC, dba The Lobster Boat Restaurant located in West Yarmouth, Massachusetts on Cape Cod and in Barnstable County: Full time Poissonier aka Fish Chef to create recipes from scratch and production methods, maintain a clean and safe environment, including but not limited to food, use of kitchen equipment,utensils and sanitation; instruct staff in proper food handling preparation and procedures;oversee food preparations and develop new and innovative food products and excellent quality food to meet market and customer expectations; ensure that his/her management is in line with the company's HR policy, fine tuning them if necessary; prepare work schedules for the team,organize staff meetings, help prepare and implement training plan for the team;and remain current in food concepts. Must have a Bachelor's Degree and employment of 32 months experience; alternate sets of education, training, and/or experience accepted;level of alternate education none, other major(s) and/or fields of study required: Culinary Chef Management or Training and Hospitality. Poissonnier aka Fish Chef, must know how to cook all kinds of fish and crustacean seafood dishes and have knowledge in butchery of raw materials and how to utilize all parts and create dishes; Special skills required but not limited to: must have supervisory, coaching staff and developmental skills; guest focused; professional team leader, detail oriented; and positive attitude working with people. Multi- cuisine exposure is a must. Must have started as a Line cook followed by sous chef and the to an executive chef level with experience in a high level high volume restaurant(s).
