If you are passionate about being your best self, doing the right thing, bringing your natural smile, and having fun, then we hope you become a member of our LaPlaya Family.The OPPORTUNITY: Noble House Hotel and Resort's is looking for an Executive Chef to lead the Culinary Team at LaPlaya Beach and Golf Resort located on the white sandy beaches of Naples, Floriday. In this role, the Executive Chef will be primarily responsible for directing and overseeing the heart of-the-house operation and working closely with catering and all food and beverages outlets Develops and plans menus considering members, guests, marketing conditions, costs, and other applicable factors and oversees its execution Sources and purchases of all necessary culinary supplies Plans, coordinates, and oversees special events menu Responsible for keeping up to date with latest food trends and techniques and incorporates them into business Develops and monitors culinary and labor budget Establishes controls to minimize food and supply waste Executes special projects as assigned, including supervisory responsibilities as needed Supervises all cooks and oversees the supervision of production Leads and manages culinary services Perform quality control by inspecting plates before guests receive them, ensuring the quality of the dish are up to standards Establish professional relationships with the team and provide educational opportunities to teach and develop skills and on other areas of the business Maintain good working relationships with key suppliers Cultivate relationships with wholesale food suppliers, farmers and other vendors, visiting sites and sampling ingredients Maintains the highest professional food quality and sanitation standard Collaborating with the Food and Beverage teams to set item prices Staying current on developing trends in the restaurant industry Maintaining the kitchen and surrounding areas in conditions that meet the company standards and health code regulations Monitoring inventory and purchasing supplies and food from approved vendors Hiring, training and supervising kitchen staff Assisting and directing kitchen staff in meal preparation, creation, plating and delivery Identifying and introducing new culinary techniques Preparing meals and completing prep support as needed Oversees all equipment purchases and repairs Oversees all physical inventory and purchases of ingredients, food items, etc. Safeguards all food preparation by implementing training to increase staff's food handling knowledge Ensure the kitchen adheres to all health and safety regulations Follow food safety guidelines and ensure all staff have adequate training on food hygiene practices, maintaining proper food storage and ensuring the quality of all ingredients Prepares, manages, coordinates, and adheres to the food and beverage operating and capital budgets Attends all food and beverage leadership meetings as directed Conducts regular department staff meetings and training Administers schedules, employee performance evaluations, coaching, and counseling sessions as needed Works a variety of shifts, as required, including nights, weekends, and holidays Complies with, reviews, and updates departmental policies and procedures and Responsible for performing timekeeping and payroll duties for all kitchen staff Perform administrative tasks, taking stock of food and equipment supplies, and doing purchase orders Ensures that guest satisfaction is met in all culinary outlets Setting and monitoring performance standards for staff Obtaining feedback on food and culinary service quality, handling guest complaints Requirements Education & Experience: Culinary degree from a central accredited Culinary institute or equivalent 8 years of proven culinary experience in a leadership or management position Experience in a luxury hotel or resort or fine dining establishment Understanding of advanced culinary arts, restaurant management and public relations Basic computer skills and MS Office skills Experience with managing payroll and budgets Physical Demands: Ability to work long hours as needed Ability to lift 45 lbs.
