Pizzaiolo / Line Cook Job Details About Wildcrust: Wildcrust is a full-service restaurant that combines traditional Neapolitan techniques, fine-dining flavors, and a 48-hour fermented dough for uniquely elevated, wood-fired sourdough pizza. In addition to pizzas and other plates, our menu highlights high quality vegetables and proteins prepared on our wood-fired grill. Wildcrust, in Highland Park / Eagle Rock is the first brick and mortar restaurant opened by Wild Group LLC, a unique collective of culinary and business professionals. Our mission is to provide exceptional food and service to our customers, while caring for our people and bettering our community. On pizza station, you would be training and working under our Head Chef, Miles Okabayashi, who is a Graduate of the Culinary Institute of America (CIA) and has extensive experience working at top fine-dining or Michelin restaurants in both New York and Los Angeles (Perry Street, The Fulton, Torishin, Uncle Boons, and Republique). Position Overview: We are looking for skilled and dedicated cooks to work our pizza station . As a pizzaiolo, you would be working with our wood fired oven (imported from Italy) and our 48-72 hour fermented dough to create some of the city's best pizzas. Wildcrust's pizzas range from the traditional marinara and m argherita to the more innovative salami picante (topped with a honey chili ferment) and lamb tzatziki (topped with braised lamb, feta, mint, and tzatziki). Essential Job Responsibilities: Prepare (stretch, top, and bake) pizzas in a wood-fired oven that meet Wildcrust's quality, quantity, freshness, and presentation standards Manage and maintain temperature of the wood-fired oven Ensure all products and prepared items are properly labeled, dated, and rotated following FIFO (first in, first out) Assist in maintaining a clean and organized kitchen, adhere to safe work and equipment practices, and follow all food safety, health, and sanitation standards Follow company policies, procedures, guidelines, and recipies Properly set up workstation with mise en place and necessary tools Adeptly use a variety of cooking techiniques and apparatus, including wood-fire oven and grill Perform any other relevant duties as assigned by Chefs Desired Qualifications: 2+ years experience working in a fast paced kitchen environment Strong Knife skills, plating techniques, and attention to detail Ability to multitask and complete a prep list in an organized and efficient manner Knowledge and/or experience with dough, pizzas, or wood fired cooking is a plus, but not required Ability to work well in a team Flexibility in scheduling, including evenings and weekends Culinary Degree or equivalent experience a plus, but not required Compensation: Hourly ($22 - $26) plus tips Benefits: Health Insurance, Dental Insurance, Vision Insurance, Dining Discounts, Family Meal
