Executive Pastry Chef Location: 194 5th Avenue, Brooklyn NY 11215 Reporting To: Daniel Eddy, Owner and Operator About Us: WINNER is a Brooklyn-based hospitality collection that includes a vibrant American café, cozy wine bars, a butcher store, and a Prospect Park kiosk. The Executive Pastry Chef will play a critical role in upholding our commitment to quality and innovation across all pastry offerings. Overview: The Executive Pastry Chef will oversee all pastry operations at WINNER Hospitality. This role involves managing daily production, maintaining product quality and consistency, fostering creativity for menu development, and ensuring pastry pars are scheduled and met across all WINNER locations. The Executive Pastry Chef will lead a team of pastry cooks, collaborate with other departments, and ensure operational excellence. Key Responsibilities: Operational Management: Oversee the daily operations of the pastry department across all WINNER locations. Ensure adherence to standardized recipes, portion control, and presentation guidelines. Maintain high standards of product quality and consistency. Develop and manage production schedules to meet retail, wholesale, and event demands. Team Leadership: Recruit, train, and manage a team of pastry cooks. Schedule and assign tasks, ensuring adequate coverage and efficient operation. Conduct regular performance reviews and provide ongoing feedback. Foster a positive, collaborative, and creative work environment. Menu Development and Innovation: Lead the creation of seasonal, innovative, and customer-driven pastry offerings. Collaborate with the culinary teams to ensure cohesion across menu offerings. Test and implement new recipes and techniques to enhance the product lineup. Inventory and Cost Management: Ensure the team monitors inventory levels, orders raw materials as needed while minimizing waste. Ensure accurate costing of recipes and maintain budgetary controls. Monitor and analyze food costs to maximize profitability. Oversee ordering and receiving processes to maintain cost-effective, high-quality purchases. Ensure the team follows proper receiving protocols, and communicate regularly with the finance department to align purchasing and inventory management with budget goals. Compliance and Safety: Ensure compliance with all health, safety, and sanitation regulations. Maintain a clean and organized work environment. Conduct regular inspections and ensure adherence to safety protocols. Collaboration and Communication: Work closely with other department managers to ensure cohesive operations. Communicate regularly with ownership regarding production status, challenges, and opportunities. Provide feedback and insights to improve processes and enhance guest experiences. Qualifications and Character: Minimum 3 years managing pastry operations in a high-volume environment. Strong leadership and team management skills. Exceptional creativity and passion for pastry innovation. Excellent organizational and multitasking abilities. Knowledge of health and safety regulations in a food production environment. Experience in wholesale operations and client relationship management is a plus. Ability to work flexible hours, including early mornings, weekends, and holidays as needed. Strong communication and interpersonal skills. Pride in spreading the WINNER brand and ethos. Ability to converse in or understand Spanish is a plus. Work Environment: Primarily in a bakery and kitchen setting with exposure to high temperatures and bakery equipment. Physical demands include standing for extended periods, lifting up to 50 lbs., and handling pastry products and equipment.
