We are currently seeking a Restaurant Manager to join our New restaurant opening in partnership with Perilla Fare. Restaurant Information: • Located in the lower level of Perilla Fare at 401 N Milwaukee Ave, Chicago, IL 60654 • Independently owned and operated business • We have a positive, teamwork driven work environment with dedicated leaders who are present and working hands on with the team • We are closed all major holidays • We are easily accessible by the CTA Blue Line or on 56 Milwaukee bus route Job Summary: The Sushi Handroll Cook at Noriko is responsible for preparing and presenting a variety of sushi handrolls in a fast-paced, customer-oriented restaurant environment. This role requires expertise in sushi preparation, an understanding of Japanese cuisine, and a commitment to maintaining the highest standards of food quality, hygiene, and customer satisfaction. Key Responsibilities: Sushi Handroll Preparation: Crafting Sushi Handrolls: Prepare handrolls using fresh, high-quality ingredients such as fish, rice, nori, and various vegetables or specialty fillings. Quality Control: Ensure all ingredients are fresh, properly stored, and used within their optimal time to maintain flavor and food safety standards. Customer Service: Order Taking: Receive customer orders directly, ensuring accurate translation of requests into sushi handroll dishes and drinks. Presentation: Present handrolls with artistry, ensuring they are visually appealing as well as delicious. Customer Interaction: Engage with customers to describe menu items, answer questions about ingredients or preparation, and promote special dishes or daily features. Kitchen Operations: Inventory Management: Monitor food inventory, reporting needs to the Chefs or managers. Preparation Work: Perform prep work like slicing fish, making sushi rice, and preparing sauces and condiments in advance of service. Cleanliness: Maintain a clean and orderly work station, adhering to all sanitation regulations to ensure a safe dining environment. Menu Development: Creativity: Contribute to menu development by suggesting new handroll creations or seasonal specials with the Chef. Adaptation: Modify dishes based on customer feedback or dietary restrictions like gluten-free or vegetarian options. Team Collaboration: Training: Assist in training new kitchen staff in sushi preparation techniques and restaurant standards. Support: Work collaboratively with other kitchen staff during peak times to ensure smooth operation and timely service. Compliance and Safety: Health Regulations: Follow all local health codes and regulations regarding food handling, storage, and preparation. Safety Practices: Implement and uphold safety practices to avoid accidents or injuries in the kitchen. Requirements: Experience: Minimum of 1 year in a sushi restaurant or similar high-volume kitchen environment. Skills: Proficiency in sushi rice preparation, fish handling, and knife skills. Knowledge of various sushi styles and ingredients. Certification: Food Handler's Certification is required. Physical Stamina: Ability to stand for long periods, lift up to 50 lbs, and work in a hot kitchen environment.
