PURPOSE AND PERFORMANCE GOALS The Bar Lead at Carlotta's Cocktail and Wine Bar is responsible for creating and maintaining a high-quality bar program that enhances guest experience and sets the bar as a premier destination in San Francisco. This role involves managing all aspects of beverage operations, including cocktail creation and costing, bartender training, and inventory management. The Bar Lead serves as a hands-on leader, regularly working bar shifts and supporting staff to ensure exceptional service, efficient operations, and adherence to quality standards. ESSENTIAL DUTIES AND RESPONSIBILITIES Program Development : Design, implement, and continually update the cocktail and beverage program, ensuring innovative offerings that meet guest expectations and maintain a competitive edge in the market. Cocktail Creation and Costing : Develop unique cocktail recipes, ensure accurate costing, and oversee seasonal menu changes. Ordering and Inventory : Manage the ordering of liquor, wine, and beer, along with necessary bar supplies. Track inventory levels and control costs by minimizing waste and optimizing ordering cycles. Training and Staff Development : Conduct training for bartenders and service staff on cocktail preparation, service techniques, and beverage knowledge, ensuring consistent, high-quality guest service. Batching and Prep : Supervise and participate in cocktail batching, garnishes, and bar setup to streamline service and maintain product quality. Service Leadership : Lead the bar team by example during shifts, providing hands-on support, managing guest interactions, and ensuring smooth bar operations. Manager on Duty Responsibilities : Act as the manager on duty during assigned shifts, which may include overseeing closing procedures, handling guest inquiries or issues, and ensuring adherence to all safety and service standards. Quality Control : Maintain the ambiance and cleanliness of the bar area, and ensure all beverages meet presentation and taste standards before being served to guests. SUPPORTIVE FUNCTIONS Assist with event planning, including creating customized cocktails and managing special beverage services. Provide support to other areas of the Food and Beverage Department as necessary. Attend and contribute to departmental meetings and training sessions as required. QUALIFICATIONS AND SKILLS Experience : Minimum of 3-4 years in a bartending or beverage leadership role, preferably in a high-end or boutique setting. Beverage Knowledge : Strong knowledge of spirits, wine, beer, and cocktail creation, with a passion for craft cocktails and service innovation. Leadership : Proven leadership abilities with experience in training and mentoring a team. Skills : Proficiency in POS systems, basic math for costing and inventory, and strong organizational skills. Physical Requirements : Ability to lift and carry up to 40 pounds, stand for long periods, and work in a fast-paced environment. CERTIFICATES, LICENSES, REGISTRATIONS Certification Requirements : Must possess required licenses or certifications (e.g., TIPS certification, Sanitation License). WORKING CONDITIONS This role operates in a high-energy, team-oriented environment and may involve rotating shifts, overtime, holidays, and weekend work as necessary.
