Beverage Director Who We Are Sitting on a quiet tree-lined street in Soho, twelve floors rise above the neighborhood's storied lofts, boutiques, and galleries. The name derives from the particular manner of hospitality, one that feels more like staying at the home of a dear friend than at a hotel "” discreet, refined, generous. Our hotel has 97 rooms and suites with four distinct FandB concepts led by an acclaimed chef. The street-side seafood restaurant and second floor cocktail bar will be venues that are open to the public. The Apartment and The Rooftop are spaces reserved exclusively for guests and friends of guests. While our hotel falls under the Standard International umbrella, it will be positioned as a wholly distinct and separate concept from The Standard with a different market positioning, design aesthetic, and service culture. Purpose of the Role This position is responsible for overseeing the beverage program and service at The Manner Hotel. The Beverage Director reports to the FandB Director and is responsible for creating high and consistent standards in beverage delivery, manages ordering, inventory and the cost of goods as well as leading a bar team to meet exacting standards. Menu development to keep up with industry trends is imperative. Reports To: Director of Food and Beverage Supervises: Bartenders, Barbacks Essential job functions and RESPONSIBILITIES: Develop and direct cocktail program that adds quality, talkability, speaks to the venue concept, and enhances the guest experience Maintain or curate a wine and beer program that makes operational sense for the venue as a whole, speaking to venue and current tastes and trends, including seasonal refreshes Execute and program soft drink, tea, coffee in line with brand standards Leverage non alcoholic suppliers and relationships for training and pricing support where necessary Maintain visual and taste consistency across all beverage outlets, include monthly reports on wine, updates issues and action plan Ensure all bars have current up to date recipe and look book for menu drinks and classics, daily set up guide and pars Ensure that appropriate physical inventory of all beverage items is available to staff/guests at all times Manage all bartending and bar back scheduling ensuring all bars are staffed according to business need Manage all menu costing to be approved by FandB Director Place PO for all beverage orders Oversee Monthly Inventory through Craftable Update Craftable weekly for pricing and all new wine and spirit items. Bill and hold purchases in order to achieve maximum profit for beverage costs Part of Interview process, select, train and supervise and coach beverage staff for the efficient operation of the outlet. Provide ample and continuous beverage training - both internal and external, tasting and education to ensure staff liquor and beverage knowledge is the best in our industry Assess all bartenders to ensure proper service skills Stay ahead of industry trends, competitor innovations, and guest preferences to inform future activations and menus Create and keep up to date bar prep list for bar prep cook Maintain effective and timely communication to all FOH/BOH and Home Office team members Maintain positive working relationship with kitchen leaders and line staff throughout service periods Ensure excellent service and hospitality is provided for all guests, community, vendors and investors Continuously provide support to all service staff and actively participate in the cycle of service as needed Introduce new brands and products to venues Qualifications and Requirements: Essential : At least five (5) years of experience in the direction and management of employees in a similar environment At least (2) years running a cocktail program (responsibilities should include list selection, purchasing, inventory management, staff training, etc.) Physical Requirements : Move, lift, carry, push, pull, and place objects weighing less than or equal to 50 lb. without assistance. Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity. Stand, sit, or walk for an extended period of time or for an entire work shift. Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
