At Weckerly's, we take pride in crafting exceptional products made with all-natural ingredients, prepared from scratch in our production kitchen in Philadelphia. As we continue to grow, we are seeking a talented individual with a background in baking and production leadership to manage our production kitchen. As the leader of our ice cream and bakery production team (around 7 staff members), you'll be responsible for overseeing the entire process "” from planning to delivering high-quality products ready for sale. We are also looking for someone with a creative flair who can help us innovate and develop new flavors that will delight our customers Responsibilities Include: Production Planning: Produce production plan based on wholesale, catering, retail, and promotion needs. Ideal plan should be two weeks of production and updated as necessary to stay on schedule. Weekly short-term and long-term menu planning and brainstorming. Provide detailed list of "to-dos" for manufacturing staff. Lists should be based on overall production plan. Ability to adjust plan based on wholesale and retail needs. Inventory and Costing: Perform regular inventory of ingredients, WIP, and finished product. Report weekly throughput, RandD cost, and waste. Ensure we are managing inventory based on FIFO. Ordering : Vendor management and weekly ordering of ingredients and supplies Equipment Maintenance : The oversight and execution of equipment maintenance. Systems to perform daily, weekly, and monthly cleanings. Manage maintenance and temperature logs. Contacting and external vendors for preventative maintenance and repairs. People Management : Oversee and manage the production team, ensuring effective staff performance and development. Conduct training sessions for new employees to ensure they are well-equipped with necessary skills and knowledge. Coordinate kitchen operations, including task assignments and workflow management, to maintain efficiency. Provide ongoing support, guidance, and on-the-job training to enhance the performance of kitchen staff. Lead the recruitment process, including interviewing and hiring new team members to meet staffing needs. Scheduling staff two weeks in advance based on production needs. Manage request for time-off and availability changes. Production Tasks Pasteurization: Responsible for pasteurizing ice cream bases to ensure product quality and safety. Regulatory and Compliance: Record batch information into log, keep track of pasteurization charts, and records required for the Department of Agriculture. Testing and Regulatory: Ensure we are testing ice cream products according to the requirements of the Department of Agriculture. Schedule quarterly Department of Agriculture inspections and reviews. Quality Assurance: Ensure we our finished product reflects our commitment to providing an exceptional product that taste wonderful, is safe to consume, and that follows the Department of Agriculture regulatory requirements. Catering / Wholesale Order Fulfillment: Handle the fulfillment of catering and wholesale orders, ensuring timely and accurate delivery of products. Production Oversight: Management will not be expected to regularly perform these duties; however, management should be fully competent in the following areas to ensure appropriate knowledge transfer and ability to train and provide oversight. Batch Freezer Operation: Operate the batch freezer to produce ice cream for various products, including ice cream sandwiches, pints, and tubs. Baking Assistance: Support the baking process as needed to prepare ingredients for ice cream sandwiches and other products. Novelties: De-framing, cutting, wrapping, and packing of ice cream sandwiches. Ice Cream Sandwich Production and Packaging: Assist with the production and packaging of ice cream sandwiches, ensuring high-quality standards are met. Product Development and Recipe Testing: Participate in product development, including testing and refining recipes to improve or create new offerings. Making sure all weights and outputs are documented for new recipes. Maintaining organized and accessible information for all departments. The continual development, training, and implementation of quality control procedures.
