About Fresco by Scotto: Fresco by Scotto is a premier Italian dining destination in New York City, renowned for its upscale ambiance, authentic cuisine, and high-energy atmosphere. It is a family-owned and operated affair for over three decades, with Rosanna Scotto and her children Jenna Ruggiero and LJ Ruggiero as current ownership. We are seeking a dynamic and innovative Executive Chef to lead our kitchen with creativity, precision, and a passion for excellence. The ideal candidate will have experience managing a high-volume, fine-dining kitchen while inspiring both front and back-of-house teams. Job Responsibilities: Menu Development: Develop and execute innovative, seasonally inspired, holiday and private event menus that balance creativity with customer preferences and industry trends. Create and refine daily specials while maintaining the integrity of Fresco by Scotto's signature dishes. Stay current with culinary trends and incorporate fresh, innovative ideas into our offerings. Kitchen Operations and Cost Management: Oversee all kitchen operations, including inventory management, ordering, and cost control to maximize efficiency and profitability. Implement and manage XtraChef software and integrate inventory management within Toast (training available if needed). Maintain rigorous attention to portion control, waste reduction, and ingredient sourcing to optimize kitchen performance. Maintain in-house recipes with financial cost values Foster a culture of teamwork, accountability, and continuous learning. Lead by example, inspiring and motivating both the back-of-house and front of the house teams to deliver exceptional guest experiences. Maintain consistency in execution and uphold the restaurant's reputation for excellence. Food Safety and Compliance: Establish and enforce best-in-class food safety and sanitation practices in full compliance with Department of Health regulations. Ensure all kitchen staff are trained in proper food handling and safety procedures. Maintain a clean, organized, and efficient kitchen environment at all times. Hours of Operation: Monday-Friday: Lunch 12:00 PM - 3:30 PM | Dinner 5:00 PM - 10:00 PM Saturday: Dinner 5:00 PM - 10:00 PM Sunday: Closed Compensation and Benefits: Competitive salary with performance-based incentives. Qualifications and Experience: Minimum of 3-5 years of experience as an Executive Chef or Sous Chef in a high-volume, fine-dining restaurant. Full knowledge of recipe cost values, PandL, and DOH requirements Proven leadership skills with the ability to manage and inspire a diverse kitchen team. Deep understanding of Italian cuisine, seasonal ingredients, and contemporary culinary trends. Exceptional organizational and multitasking abilities. Strong knowledge of food safety regulations; ServSafe certification or Food Handler's License required. Proficiency in kitchen management software is a plus.
