JOB SUMMARY: Provides the highest level of Guest Service. Under general supervision, responsible for coordinating with the Food Service Operation Supervisor for daily inventory needs. Establish food order requests for production staff. Coordinate training and relief of production kitchen staff. Maintain consistency and quality standards for food produced. Enforce all food safety practices. May be assigned to work in the other Food Service Restaurants and perform duties of a Food Service Operator. Must be able to work a varied work schedule; 7 days a week including evenings, weekends and holidays. May work as early as 6:00 am to as late as 2:00 am. Schedule will vary depending on season. Must be willing to conform to company grooming and hygiene standards. May not wear jewelry or false nails. Must obtain a CA Food Handler card within 30 days of hire, or show proof of existing CA Food Handler card. Obtain ServeSafe Manager certification within one year. JOB TASKS: * Greet every Guest and answer Guest's questions and provide consistent, friendly and helpful Guest Service. * Prepare and cook all types of food items including deli sandwiches, salads, specialty party trays and perishable products. * Supervise, train, and coordinate production kitchen staff. * Maintain high standard of sanitation and safety. * Maintains an official Temperature Log. * Oversee preparation and presentation of food items. * Communicate and make recommendations based on observation of product demand. * Anticipate the needs of production levels and meet demands of inventory on a daily basis. * Coordinate with Chef/Kitchen Manager to establish daily production request orders. * Keep Chef/Kitchen Manager and Events Assistant Manager informed of significant concerns and issues. * Rotate food display to meet rotation standards. * Deliver food orders to restaurant location by established time line and maintain proper levels. * Prepare weekly work schedule for staffing deli. * Complete food production requests. * Responsible for coordinating Birthday Party event needs. * . Responsible for placing food orders for deli needs. * Assist Chef/Kitchen Manager in completing staff evaluation and training documentation. * Clean equipment and maintain work area to meet a high level of cleanliness. * Control food wastage. * Complete closing checklist and break sheet by the end of each shift. * Make recommendations for improvements of menu, quality, maintenance and equipment use. * Contribute input to the employee performance evaluations. * Ability to obtain a food handler card within 30 days of hire. * Other duties as assigned. TRAINING AND EXPERIENCE: Must provide outstanding Guest Service. Six months experience in a food service establishment. Some experience in commercial cooking and volume food preparation is desirable. Supervisory experience preferred. KNOWLEDGE/SKILLS/ABILITIES: * Ability to train, motivate, supervise and lead a team. * Ability to follow and enforce all food safety regulation and controls. * Ability to comply and enforce all food service departmental and company policies. * Ability to use a knife and be proficient in knife techniques. * Ability to follow verbal and written directions. * Ability to perform repetitive work such as slicing and dicing. * Ability to use proper back safety techniques. * Ability to quickly learn methods for using various equipment: slicer, steamer and commercial ovens. * Ability to effectively clean and sanitize work areas to a high level of cleanliness. * Ability to handle high volume production. * Ability to be safety conscious for self and others. * Ability to communicate effectively. * Ability to meet production output requirements. * Ability to obtain CA Food Handler card within 30 days of hire. * Ability to obtain ServeSafe Manager certification within one year. PHYSICAL REQUIREMENTS: * Able to walk, bend, stretch and stand up to eight hours at a time. * Able to be mobile and to move at a fast pace. * Must be able to lift up to 30 lbs. * Bi-manual dexterity.
