Diner, the pioneering farm-to-table restaurant in Brooklyn, is seeking an Executive Chef. We offer: Competitive salary Subsidized medical, dental, and vision insurance at 90 days Industry-leading paid time off plans + paid family leave Access to our 401k plan starting at hire Monthly internal and external dining stipends Annual continuing education allowance Discounts across our group of businesses Access to our Employee Emergency Assistance Fund Key Responsibilities: In partnership with the General Manager and Director of Restaurant Operations, develop business strategies and plans that ensure alignment with short- and long-term objectives and translate those strategies into actionable goals for performance, growth, and annual operational planning Lead the team on menu development, planning, and execution Lead the team to operate in accordance with achieving budgeted sales and operating costs, including actively engaging with monthly PandL statements and other financials to understand, and impact, sales and cost trends Organize, schedule, and monitor staffing, workflow, and productivity in accordance with business demand to achieve budgeted labor costs Manage timecards, punch change requests, and time off requests Maximize profitability of and minimize loss in food program Routine inventory maintenance and ordering of all meat, fish, dairy, produce, and dry goods Cost all dishes to ensure accurate pricing prior to their addition to the menu Build and maintain positive, consistent relationships with farmers and meat purveyors Perform monthly inventory Work with the General Manager to establish a DOH protocol and enforce compliance Establish and document daily, weekly, and monthly cleaning and maintenance routines and checklists Identify areas in need of repair and manage the scheduling and completion of those repairs Work with the General Manager to: Develop and implement systems and processes that are effective, efficient, and compliant with all laws, regulations, and internal policies Continuously recruit and hire candidates to build an agile, diverse, and committed team, including trailing potential cooks and evaluating their competency and skill level Teach, train, and mentor, including identifying opportunities for cross-training and advancement, to foster the conditions for success on team and individual levels Resolve conflict and employee performance issues through mediation, coaching and counseling, and progressive discipline Manage with empathy and integrity and ensure strong, respectful, productive communication across all teams Participate in regularly scheduled meetings regarding the overall strategy and success of the business, including quarterly financials meetings and HR trainings Work with the Director of Restaurant Operations and General Manager to develop a vision for the restaurant and to establish and achieve clear individual performance goals The Marlow Collective is a group of New York hospitality brands including the restaurants Diner, Marlow and Sons, Roman's, Achilles Heel, and Borgo; breads bakery She Wolf; whole-animal butcher and grocery Marlow and Daughters; catering company Marlow Events; and Stranger Wines and Spirits.
