Tokyo Record Bar and Listening Room is looking for an Executive Head Chef to take helm of our small but mighty kitchen. Tokyo is a unique fusion of Japanese culinary artistry and music culture, offering an omakase-style tasting menu and í la carte options in an intimate setting featuring a vinyl listening room. Service functions in two ways- A nightly pre fix menu that can change as regularly as you like and a small izakaya menu for the listening bar that is efficient and consistent which is ordered a la carte. Job Summary: We're seeking an exceptional Executive Chef to lead our culinary team, driving creativity, quality, and consistency in our Japanese-inspired kitchen. The ideal candidate will have a deep understanding of Japanese cuisine, passion for innovation, and ability to balance artistic vision with operational excellence. This menu does not need to be strickly Japanese but candidate needs to be able to utlize ingredients and pull influence from Japanese styles. Responsibilities: Culinary Leadership: 1. Develop and execute menus for tasting menu, í la carte, and special events, showcasing seasonal ingredients. 2. Collaborate with owners and management to create menu concepts, pricing, and promotions. 3. Lead kitchen operations, ensuring seamless execution, quality control, and food safety. Team Management: 1. Mentor, train, and supervise a diverse team of cooks, sous chefs, and dishwashers. 2. Foster a positive, inclusive kitchen culture, promoting teamwork and growth. Ingredient Sourcing and Inventory: 1. Establish relationships with suppliers and work with our current vendors 2. Manage inventory, minimizing waste and optimizing costs. Quality Control and Consistency: 1. Maintain exceptional culinary standards, ensuring consistency across dishes. 2. Conduct regular tastings and feedback sessions. Requirements: 1. 3 + years of chef experience in refined dining ideally with an emphasis on Japanese ingredients. 2. Culinary degree or equivalent experience prefered but not manditory. 3. Strong leadership, communication, and team management skills. 4. Creativity, adaptability, and passion for innovation. 5. An awesome personality, as this is an open kitchen.
