$25-$29 Located steps from public transit Employee Market Discount at Reading Terminal Market Family Meal Daytime Hours The HEAD LINE COOK / BAKER is responsible for preparation and production of all doughs and other high quality menu items as well as leading the line in a fast paced environment. Experience with pizza dough is a plus. Experience with dumpling making and pleating is also a plus . Located in Reading Terminal Market. We have been featured in Philadelphia Magazine, Eater, Thrillist and Philadelphia Inquirer. â— Use and understand all recipes and maintain consistency and quality across the menu. â— Prepare doughs accurately, which includes mixing, kneading, dividing, shaping, proofing and baking. â— Follow production schedule and maintain efficient timelines - especially in regards to proofing. â— Ability and interest in working with a variety of doughs including pizza dough and knowldage of various bread-making and pizza making tecnhinques is a plus. â— Knowladge of dumpling making is also a plus, including dumpling rolling, pleating and prep of various dumpling stuffings. â— General preparation of items by cutting, chopping, mixing, and preparing sauces. â— General cooking of food items by using methods specified in recipes and kitchen standards. â— Running the line and delegating tasks to line and prep cooks. â— Cleans and sanitizes cooking surfaces at the end of the shift. â— Maintain cleanliness and comply with food sanitation requirements by properly handling food and ensuring correct storage. Qualifications: Interested in menu and recipe development, releasing new specials and experimenting with fresh ideas. Enjoys a professional vibe and has a passion for food and hospitality. â— Experience with various cooking methods, procedures and basic knife skills. â— Awareness of basic kitchen practices, e.g. FIFO and labeling, etc. â— General knowledge of bread and dough production is a plus. â— General knowledge of dumpling making is a plus. â— Experience in a fast-paced environment is a plus. â— Punctuality, organizational skills and attention to detail. â— Ability to plan and organize production. Accuracy and speed in executing tasks. â— Ability to operate large mixers and other tools/equipment in a professional kitchen. â— Min 3-5 Years of experience. â— High school diploma or GED. â— US work authorization required. â— Serve safe certification a plus â— Certificate or degree in culinary arts preferred. â— Work and stand/bend and lift 8-9 hours. â— Lift up to 50 pounds.
