The Restaurant Bastia is a Sardinian and Corsican restaurant in the Fishtown neighborhood of Philadelphia. We are located in the beautiful Hotel Anna and Bel, which is a 50-room hotel in the historic former Penn Home. Both the hotel and restaurant opened in August, 2024. We butcher whole animals, make bread in-house, have an extensive handmade pasta program, and maintain close relationships with farmers in the region. The restaurant has opened to wide acclaim, including the highest 4-star rating from Jason Sheehan of Philadelphia Magazine, and has been featured in the Wall Street Journal among other national publications. We are dedicated to maintaining the highest standards for guest experience and culinary excellence and are aiming to develop the next generation of ambitious cooks and chefs. The Role The Sous Chef is responsible for delivering excellence in guest service by developing, overseeing, supervising and leading the kitchen team. These goals will be received by working directly with the Chef de Cuisine and Executive Sous Chef to establish and maintain standards across all food operations. Responsibilities â— Lead daily department and team activities effectively. â— Help to coordinate menu planning and implementation. â— Maintain food standards and presentation. â— Organize cost-effective and hygienic food production. â— Assist in recruitment, training, and discipline of kitchen team. â— Improve operational efficiency without compromising service quality. â— Control food and labor costs. â— Provide leadership support, coaching, and recognition to team members. â— Supervise kitchen personnel and ensure timely food production. â— Uphold hospitality standards, resolve guest complaints, and comply with regulations. Requirements and Experience â— Mastery of various culinary styles and proficiency in all line-level cooking stations. â— Maintains a consistently high level of personal appearance and hygiene. â— Flexibility to work a schedule that includes weekends, holidays, and late hours. â— Punctuality is a must - ability to report to work on time as scheduled. â— Endurance for extended periods of standing and/or walking. â— Demonstrates a guest-responsive culture with exceptional service as the top priority. â— Attentive, accountable, highly organized, and adept at planning multiple activities. â— Excellent interpersonal and communication skills, including phone etiquette. â— Maintains a positive, professional demeanor, and excels in team collaboration, providing lateral service as needed.
