Reports to: Andrew Yeeles, Pastry Chef Supervisory Scope: None Objective As a member of the WINNER pastry team, you will support the production and execution of all pastry and dessert items for WINNER establishments. This includes, but is not limited to, viennoiserie, scones, cookies, cakes, gluten-free products, and plated dessert components. Collaborating with the Pastry Chef and other team members, you will help meet production goals, maintain quality standards, and foster seamless communication across departments, from front-of-house staff to upper management. Pastry team members ensure all food quality and safety standards are met while maintaining a clean, organized, and compliant work environment. This includes adherence to policies set by the NY Department of Agriculture and Markets, OSHA, and other regulatory agencies. You will also assist with inventory management, report needs or inefficiencies, and contribute to problem-solving efforts within the pastry department. Note: The responsibilities outlined below may evolve over time based on the needs of the business General Duties Assist in the production of pastry items, including viennoiserie, scones, cookies, cakes, gluten-free products, and plated dessert components. Prepare and bake pastries for morning and afternoon service. Tray and pull pastries for the next day's bake. Maintain a clean and organized workspace throughout the production day. Consolidate and organize all dry goods and perishables. Communicate inventory or order needs to the Pastry Chef or Pastry Sous Chef. Clean and sanitize all work surfaces and equipment at the end of the day. Knowledge, Experience, and Skills Basic knowledge of pastry and viennoiserie techniques, including mixing, proofing, shaping, and baking. Ability to work a flexible schedule, including weekends and holidays. Precision in weighing and measuring ingredients using both English and Metric systems. Familiarity with cleanliness and sanitation protocols and ability to maintain an organized kitchen workspace. Commitment to a safe and efficient work environment, with proactive reporting of maintenance issues. Ability to receive goods following established protocols and document inventory accurately. Practice inventory management and FIFO (First In, First Out) principles. Physical Requirements Consistently perform essential job functions while adhering to ADA, FMLA, and other workplace standards. Maintain regular, punctual attendance. Ability to lift and carry items weighing 10-30 lbs regularly and up to 50 lbs occasionally. Stand for extended periods and move efficiently around the workspace. Bend, lift, carry, and extend arms and hands above shoulder height as needed. Climb steps regularly in a fast-paced environment. Preferred Experience and Traits Professional pastry production experience and/or culinary education. Availability for early morning and weekend shifts. Strong communication and hospitality skills with a team-oriented mindset. Positive energy and enthusiasm for a collaborative, creative environment. Attention to detail and a commitment to precision. Pride in promoting WINNER's brand and values. Fluency in English is required; Spanish language skills are a bonus. Food Handler Certification and knowledge of food safety standards are highly valued.
