We are looking for a skilled cheesemaker and pizza dough specialist to join our team, creating fresh cheese and expertly prepared dough daily. Job Description: We seek an In-House Cheesemaker and Pizza Dough Specialist who has hands-on experience in crafting cheese and preparing pizza dough from scratch. This role is integral to our commitment to fresh, high-quality ingredients and will involve the production of cheese and dough for our menu, ensuring that each batch meets our exacting standards. Key Responsibilities: Produce a variety of cheeses in-house, managing the entire process from milk preparation to aging, as needed Prepare fresh pizza dough daily, including mixing, proofing, fermenting, and portioning to ensure consistency and quality Work closely with the culinary team to incorporate house-made cheese and dough into menu items and seasonal offerings Maintain cleanliness, organization, and compliance with health and safety regulations in all production areas Qualifications: Hands-on experience in cheesemaking, with knowledge of processes such as pasteurization, curdling, aging, and storage Proven expertise in pizza dough preparation, including understanding of fermentation, hydration, and texture techniques Strong attention to detail, with the ability to ensure consistent quality in both cheese and dough production Ability to work efficiently and collaboratively in a fast-paced kitchen environment Food handling certification preferred or willingness to obtain
