As a Production Manager, you will be responsible for planning, directing and coordinating the activities of production employees to prepare and deliver finished food products to the serving areas in an efficient, timely and proper manner. Key Responsibilities: * Oversee the day-to-day operations of the Production Department * Plan and administer employee work schedules for production staff * Maintain required records including food production, meal counts and personnel records * Ensure staff follows proper sanitation procedures * Manager food service employees, including assembly line workers, runners, machine operators, line leaders, and supervisors * Manage cleanliness and maintenance of equipment, including refrigerators, freezers, packaging machines, etc. * Assign equipment to trained staff * Recruit, interview, hire, and train employees * Direct the cleaning of the food preparation areas including all utensils and equipment * Manage employee records and complete paperwork to comply with state and federal laws and regulations * Direct the staging of food items for assembly line production * Oversee that food presentation is attractive * Ensure food frozen food items are stored and rotated properly by staff members * Lead processing and preparation of food products to ensure compliance with standards of cleanliness and hygiene Preferred Qualifications: * B.S. Degree in Food Services Technology/Management or related field; or A.A. Degree plus four years of directly related experience preferred * Inventory and purchasing knowledge and control * Excellent knowledge with a focus on quality, production, sanitation, food cost controls, and presentation a plus * Experience with P&L accountability highly desirable * High volume food production background highly desirable * ServSafe certified Associates at Canteen are offered many fantastic benefits.
