The Closing Maí®tre D is responsible for overseeing The Wallace Room staff and leading objectives/strategies for successful operations. They direct the closing procedures to ensure the restaurant is ready for the next day, and report to the General Manager regarding any restaurant needs and staff issues. Key Responsibilities ï‚· Maintain The Wallace Room and Inventory: Ensure all supplies and equipment are properly maintained. Report to the General Manager (GM) for any needs. ï‚· Oversee Host Staff: Manage reservation and seating needs. ï‚· Manage Closing Operations: Direct hosts in completing closing duties, including closing awnings, emptying ashtrays, emptying office garbage, restocking matches, napkins, and candles for the next business day. ï‚· Process Close Out Reports: Collect reports from each captain/bartender, and enter the information into the End of Day Report. ï‚· Calculate Tips: Determine tip amounts on close-out reports and enter into the tip sheet. ï‚· Ensure Security: Make sure all staff leave on time, lock front doors and 3rd-floor doors, and ensure only the porter remains. ï‚· Promote Efficient Operations: Lead daily operations and encourage efficient, effective service standards to elevate the guest and staff experience. ï‚· Create a Collaborative Environment: Foster teamwork, continuous improvement, and a passion for providing excellent service. ï‚· Collaborate with Events Team: Assist in ensuring that The Golden Swan (TGS) standards are met for all events. ï‚· Training and Development: Train teammates to show initiative and make recommendations to direct reports. ï‚· Monitor Productivity: Maintain the productivity level of employees and suggest innovative channels to maximize revenue. ï‚· Gather Customer Feedback: Collect feedback and present it to the General Manager, Chef, and Ownership to develop initiatives that address and highlight concerns.
