Position: Sommelier FLSA Status: Non-Exempt Location: Legacy Records Reports to: Management Direct Reports: N/A Position Summary The Sommelier is a top performer and leader on the team, demonstrating a high level of excellence in both food and beverage knowledge, as well as all technical aspects of the position. This team member will demonstrate a unique depth of wine knowledge, hospitality, and is an expert team member who is able and willing to constantly teach and coach others. A Sommelier is a leader who will help the team as a whole to grow as professionals and improve overall wine knowledge and service. Legacy Records and DHG Policies and Guidelines Arrive on time and "floor-ready" for all scheduled shifts. Arrive to work following dress code guidelines and standards. Clock in and out for each scheduled shift and shift break. Exhibit accurate and effective use of time and attendance portals and procedures. Abide by all Legacy Records and Delicious Hospitality Group (DHG) Policies and guidelines. Team and Guest Experience Maintain an understanding of the proper steps of service and consistently execute them with efficiency and grace while maintaining a sense of urgency throughout service. Anticipate guest needs and create strong guest relationships. Demonstrating strong guest recognition skills is critical. Ensure constant communication with staff members, management and the kitchen at all times during service. Actively mobilize the service team to fulfill all steps of service while focusing on guest needs. Demonstrate speed and accuracy when using the POS system during service. Practice and refine the use of salesmanship when interacting with guests. Wine Service and Sidework Precise, consistent and timely execution of wine service. Assist bartenders and wine bar servers in restocking by the glass (BTG) wines. Responsible for working independently and proactively , making the sure the cellar and wine stations are prepared for service. Ensure proper maintenance, organization and cleanliness of the wine room, wine storage and service areas at all times. Able to train fellow teammates by leading wine education as well as coaching throughout the shift. Work efficiently and effectively to maintain the standards of service, specifically with regards to wine service. Assist with all POS systems, inventory systems, beverage lists and any other information related to the beverage program in an effort to keep the aforementioned accurate and up to date. Assist with the Beverage Inventory process and help make its accurate completion. Menu Knowledge, Sidework and Station Maintenance Demonstrate the highest knowledge of all menu items, as well as daily specials. Must be responsible for being able to effectively describe each dish as well as the ingredients, preparation/techniques, purveyors and allergens. Must have a high level of beverage knowledge, specifically the full wine list, beer, cocktails and digestif spirit offerings. Actively engage with the team (during line-up and outside of it) to help build wine knowledge and develop Servers/Bartenders in their growth.
