Celebrity Chef is seeking an experienced Executive Chef / Kitchen manager for a proven concept, launching soon. This Regional Indian Cuisine restaurant features A la carte menu options, space has a Speakeasy bar and an event space with a bar. Candidates must have a high-level knowledge of food and wine along with experience ordering, managing inventory and wine costs. A true passion with the ability to teach and develop a team is very important. Leading the back of house kitchen operations through strong example and clear communication of expectations. Know all NYC Health Department rules and regulations. Assisting the Chef Patron (Celebrity Chef Partner) and his team, in execution of all dishes. Creating kitchen staff schedule and maintaining payroll budget, including overtime requests. Ensuring smooth kitchen function across all services. Maintaining a clean and organized back of house kitchen operation. Organizing family meal services for staff. Ensure all cooks follow appropriate food safety practices. Ensure all cooks are in proper uniforms and are appropriately prepared for their shift. Ensure all stations are cleaned and broken down properly. Maintain a clear working knowledge of all menu items at all times, as well as the sources for all of the ingredients in all of the menu items. Work with Chef to implement all menus ( Lunch, Brunch, Dinner, Late Night, and Team Member Meals). Perform daily check of all areas of kitchen to ensure properly functioning equipment as well as a safe, clean and well organized working environment. Maintain a clean and well organized working environment for all kitchen staff. Ensure that all kitchen equipment (all refrigeration, ovens, stove, salamander, grill, ice machine, mixer, dishwashers, slicer and blenders) is regularly maintained and safely functioning.
