Key Responsibilities: - Ensure proper and efficient execution of Pastry Department to include overseeing strategic planning and production for Brasswood Bar + Bakery, Brasswood Bar + Kitchen, and Brasswood Events. - Manage daily pastry operations and schedule support staff to ensure minimal production gaps. - Train, mentor, and discipline pastry staff while promoting an inclusive and calm work environment. - Responsible for menu development, product knowledge, quality service, product and plating - Manage special requests - Control and manage food and labor costs associated to the department - Maintains a clean and organized pastry work area - Adheres to all safety and handbook procedures - Other duties as assigned Position Requirements: - Five + years previous experience required in Bakery and/or Restaurant - Strong knowledge of classic and modern pastry, chocolate work, and baking techniques - Solid understanding of cooking methods, ingredients, kitchen equipment, and related processes - High level of professionalism and strong work ethic - Ability to lead a team in a fast-paced, high-pressure environment - Time management strengths with the ability to multi-task - Minimum of high school diploma. Candidates with culinary degrees are a plus, but not required - Proven track record of effectively leading and managing others
