Michelin Star and James Beard Award winning Chef Jeremiah Langhorne of The Dabney Restaurant in Washington, DC is looking for an executive pastry chef to join his expanding restaurant group. This position requires an experienced pastry chef who has true passion for both French and seasonal cuisine and is committed to excellence in their cooking and guest experience. The executive pastry chef role will include overseeing the restaurant group's new French focused concept with emphasis on baking and viennoiserie along with creation and execution of desserts for The Dabney. Full-time position available immediately Job Description Daily production for all dessert items, including but not limited to viennoiserie, pastries, ice creams and breads Management of a team of 3-6 people Management of all ordering and acceptance of daily deliveries and ability to keep things within set cost margins with suppliers Handles daily scheduling and hours and management of payroll Management of interviewing, hiring, training and reviewing of pastry and baking staff Work with FOH to establish and meet pars Developing and creating dessert menu and recipes Management and organization of kitchen, including organization and cleanliness of dried storage, walk-ins, and dairy fridge Daily quality checks of products Attend certain outside events and programs with possible travel Qualification Requirements Minimum 4 years' experience in a restaurant with a focus on pastry, with at least 2 years of having high level managerial responsibilities of a pastry team A genuine passion and knowledge for food and pastries A thorough knowledge and appreciation of seasonal cuisine is a must Prior experience with laminated dough, cakes, ice cream and baking Experience with service and expediting Knowledge of how to work with a dough sheeter and depositor Dependable and hard-working A strong sense of urgency and strong communication skill Able to take constructive criticism, learn quickly, and constantly improve Must be meticulously clean and aware of all food safety standards (DC Food Managers License a plus) Must be available to work on different shifts, weekends, and holidays.
