Job description JOB: Sushi Chef or Itamae - Cescaphe Event Group, Philadelphia, PA Job description: Prepare traditional Japanese dishes such as sashimi, sushi, and maki rolls featuring raw fish and rice. Create sushi bar menus and ensure compliance with food safety and hygiene standards. Sushi Chef duties and responsibilities Develop and prepare visually appealing and pleasing dishes to the palate to delight customers at events. Overview of the sushi menu and its significance A critical role of incorporating a range of Japanese dishes Strategic menu planning and dish selection Careful consideration of the target audience's preferences and dietary need Assertive ingredient sourcing and proactive inventory management Precise fish preparation techniques Meticulous food preparation and artful plating Firm team management and supervision Strict adherence to health and safety regulations Daily Tasks- Monitor and compare protein counts for accuracy. Ensure all perishable items are delivered in good condition. Check food stations for accuracy. Verify proper recipe use. Oversee kitchen sanitation and food storage. Ensure attractive food displays and quality. Strive for productivity and adherence to procedures. Cost Control Minimize waste, handle food carefully to maximize freshness, keep walk-ins organized, return unused items, and record waste. Guest Relations/Customer Service Responds promptly to customer needs; attentively answers to requests for service and assistance. Treat guests with care and respect at all times. Inventory and Equipment Usage Review all specifications and identify special event needs. Ensure all equipment is working properly before the event, supervise food storage maintenance Enforce safety and sanitation procedures Promptly request outstanding items from the commissary. Teamwork Establish and maintain effective relations; exhibit tact and consideration for others. Offer assistance and support to co-workers; work cooperatively in group situations; actively work to resolve conflicts. Balance team and individual responsibilities; exhibit objectivity and openness to others' views; put the team's success above own interests. Personnel Administration and Management Interaction Other responsibilities: Maintain strong working relationships with all department managers. Ensure team members follow duty checklists and timelines for event setup. Take part in culinary meetings. Document team member incidents and disciplinary actions. Uphold standard operating procedures and customer service standards. Lead dinner line-up and dessert setup. Communicate with the Event Manager and Matre d for smooth service transitions. Communication and Professionalism Consistently adheres to and promotes CEG's Mission Statement and Core Values. Expresses ideas and thoughts verbally and in written form. Exhibits good listening and comprehension. Able to read and interpret written information. Adapts to changes in the work environment; able to deal with frequent changes, delays, or unexpected events. Consistently arrives for work and is punctual, ensuring work/shift is covered when absent. Undertakes self-development activities and seeks increased responsibilities. Education: 3 or more years of experience, ideally in a commercial kitchen Certificates/Licenses: ServSafe certification a plus Freedom from illegal use of drugs and freedom from use and effects of use of drugs and alcohol in the workplace.
