Supervises the planning of menus for therapeutic diets, and controls food costsSupervises food production and service programs, as well as departmental staff involvedEnsure food preparation for optimal nutrition and economic handling of food, as well as efficient usage of time. Maintain and issue a file of standardized recipes adjusted to the proper yieldPlan menus, purchase food and assign duties for special functions. Adapt master menu cycle to individual and Center preference with Consultant DieticianCheck food for flavor, temperature, and appearance on a regular basisWith Contract Dietician, monitor nutritional status of residents using regular assessments, progress notes and dietary care planningPrepare departmental budget on an annual basisMaintains inventory of kitchen tools and food suppliesMake frequent inspection of all work, storageAssures all regulatory requirements are met for the preparation, storage and nutritional aspects of residential food programQualifications of Certified Dietary Supervisor:High school diploma or general equivalency is requiredWithin two (2) years of job start, must attain certification as Certified Dietary Manager (CDM) via Association of Nutrition & Foodservice Professionals / Certifying Board for Dietary Managers.Current and active certification as CDM is a plus!2-3 years of progressively responsible experience in a commercial kitchen is desiredCandidates must maintain a working email address and phone number for employer communication.Ability to work cooperatively as a member of a teamAbility to communicate effectively with residents and their family members, and at all levels of the organizationAbility to react decisively and quickly in emergency situationsAbility to maintain confidentialityAbility to read, write and speak the English LanguageOrganization and management skillsEEO Statement:Our facility provides equal employment opportunities.
