Proper Hospitality is seeking an experienced Executive Sous Chef to join the culinary team at The Shelborne by Proper, a renowned hotel re-opening and debuting in our portfolio in early 2025.Our property will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar-lounge, and curated cafe. Resort amenities will include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.As a cornerstone of The Shelborne's dining experience, the Executive Sous Chef will work closely with the Executive Chef to ensure the highest level of culinary excellence. This role combines creative input with operational leadership, ensuring every dish aligns with our standards of quality, innovation and guest satisfaction.Key Responsibilities:Culinary LeadershipAssist the Executive Chef in menu planning, development, and execution with a focus on seasonality, sustainability and innovationEnsure consistency in quality, taste and presentation of all dishesAct as a creative partner to the Executive Chef, contributing fresh ideas to enhance the culinary offeringTeam ManagementSupervise, mentor and train kitchen staff, fostering a culture of excellence and teamworkOversee kitchen operations in the absence of the Executive ChefConduct regular staff performance evaluations and provide constructive feedbackOperational ExcellenceMonitor kitchen operations, ensuring compliance with food safety, sanitation and hygiene standardsManage inventory and procurement to minimize waste while maintaining optimal stock levelsCollaborate with the Food & Beverage team to coordinate special events, banquets, and private dining experiencesGuest ExperienceEngage with guests to personalize dining experiences and accommodate dietary restrictions or preferencesEnsure guest feedback is promptly addressed and used to enhance offerings and serviceFinancial ManagementAssist in managing food cost budgets and achieving revenue targetsIdentify opportunities to optimize efficiency and control operational expensesQualifications & Skills:Proven experience in a leadership role within a high-end or luxury hospitality settingStrong background in diverse culinary techniques, with an emphasis on fine diningKnowledge of current culinary trends and a passion for food innovationExcellent organizational and multitasking skills in a fast-paced environmentAdvanced understanding of food safety, sanitation, and health regulationsLeadership and interpersonal skills to effectively manage and inspire a diverse teamDegree or diploma in Culinary Arts or a related field preferredCompany OverviewProper Hospitality is made up of a diverse group of passionate individuals who share a common love for hotels and the art of hospitality.
