Role Purpose Statement Step into the dynamic role of crafting authentic and irresistible Middle Eastern culinary experiences tailored to delight our customers. You'll lead the design and development of exquisite dishes, honoring traditional flavors while adhering to Halal guidelines. As a key player in elevating our standards, you'll oversee the implementation, training, and quality assurance for our Middle Eastern and Halal-focused services across all CSC locations in North America. Main Accountabilities Design and Development Responsible for culinary related activities for Middle Eastern / Halal airline customers in the NAM region Accountable for the development, implementation and continuous improvement of the Middle Eastern / Halal product portfolio including the identification of standardized ingredients and creation of standardized authentic Middle Eastern recipes Work with cross functional teams of managers, executive chefs, procurement, analyst, category managers and CBASE team to achieve the common goal of creating the Middle Eastern / Halal product portfolio Work with vendors and manufacturers on designing and developing new innovation products that provide our customer with quality that meets our budgetary requirements Support Procurement Master Data Management (MDM) to create and sustain detailed standardized product specification Work in conjunction with Industrial engineers to create labor standards for portfolio of Middle Eastern related products / recipes Develop, implement and execute the standards for Middle Eastern cuisine and Halal practice across the NAM region Create a standard of culinary excellence for authentic Middle Eastern cuisine that will propel our Middle Eastern culinary expertise to a higher level including internal culinary workshops, external vendor sponsored culinary workshop, training videos, and vendor showcases Organize, coordinate, plan and present all aspects of menu presentation (from start to finish) for Middle Eastern customer across all of the NAM region to include interacting with the customer to discuss the menu items prepared Support all CSC locations during cycle changes, tender presentations, and start-ups and train the CSC on the new menus while ensuring the quality of the menu items produced Cuisine Specific Accountabilities - Halal Demonstrate an understanding of the requirements to produce menu items under strict Halal guidelines and core ingredients required to produce authentic Middle Eastern cuisine Manage the segregation of ingredients and equipment for Halal production Train all current and new hire culinary personal on all aspect of proper Halal procedures to include producing authentic Middle Eastern cuisine Knowledge, Skills and Experience Graduation from an accredited culinary school required. Minimum of five years as an executive chef with menu development experience in middle Eastern Cuisine and minimum of three year experience in a full scale production facility required. Strong documentation skills that include the creation of detailed recipes / specifications in a standardize format. Knowledge of food and hygiene regulations (i.e.: Hazard Analysis Critical Control Points) Understand and demonstrate concepts of financial controls (ex: keep food cost within budget, control stock levels while being cost conscious, minimize waste) Excellent interaction skills working with cross functional teams Knowledge of airline catering operations strongly desired Self motivated, able to prioritize and multitask activities, strong attention to detail Ability to meet hard deadlines Ability to manage multiple projects utilizing planning and organizational skills Computer skills a must (Microsoft Office, Excel, Word, and PowerPoint) to include learning internal computer programs like CBASE Ability to travel 50% of the time for menu presentations / workshops / trade shows Cuisine Specific Knowledge, Skills and Experience - Halal Strong culinary background in preparing authentic Middle Eastern cuisine Solid understanding of the Middle Eastern culture as it relates to all culinary activities Ability to read and write Arabic a plus Comprehensive understanding of Halal practice.
