The Tin Building by Jean-Georges is a sprawling food emporium located inside one of New York's most historic landmarks. The Tin Building features multiple unique venues: Several full-service restaurants, fast casual, and counter dining outlets as well as 10,000 sf of retail featuring private label products, grab and go, grocery and more. To support this significant operation the Marketplace features a large commissary kitchen and bakery, as well as an exhibition kitchen that will provide media opportunities. Reporting to the Culinary Operations Manager, this role is responsible for overseeing the daily operations and members of the Receiving and Culinary Porter teams. This includes delegating tasks, motivating, training, and mentoring team members to foster their growth. Additionally, the Assistant Culinary Operations Manager will collaborate with chefs and other department managers to manage product requisitions, allocations and storage.What You Will Do Assist the Culinary Operations Manager in supervising the receiving and porters' team to ensure seamless and efficient loading dock operations. This includes managing incoming and outgoing shipments and demonstrating effective decision-making and problem-solving abilities.Maintain Dayforce schedules and timesheet adjustments for culinary porters and receiving teams, ensuring accuracy and adherence to company policiesAssist the Culinary Operations Manager with recruitment processes, conducting candidate interviews, completion and submission of Interview Evaluation Forms, in coordination with HR recruitment team.Monitor and validate daily invoicing, inventory transfers, and reconciliation activities for the commissary and pastry teams, showcasing financial acumen.Coordinate daily product deliveries within the building, optimizing logistics and demonstrating effective resource management.Maintain a detailed inventory management system, including encoding in the inventory system.Work closely with the commissary kitchen chefs to balance purchases and sales, showcasing analytical and forecasting skills.Adjust order guide templates weekly based on evolving business needs and requirements, in collaboration with head chefs from various departments, displaying adaptability and business acumen. Including product assignments on the inventory system.Ensure Standard Operating Procedures (SOPs) are followed and take corrective actions as needed to improve processes and employee performance, emphasizing a commitment to continuous improvement.Adhere to all Department of Health (DOH) protocols during the receipt of products, with a particular focus on quality and temperature validation, highlighting a commitment to safety and quality control.Conduct routine checks between the loading dock and third floors to ensure all supervisors are efficiently fulfilling their day-to-day responsibilities, showcasing leadership and accountability.Collaborate closely with the Culinary Operations Manager to maintain a high standard of operational excellence, demonstrating strong leadership and communication skills.Ensure all storage areas within the third floor adhere to DOH regulations and safety standards, emphasizing attention to detail and compliance. Work closely with the Health and Safety Manager on adherence to DOH standards.Liaise directly with chef managers and other department managers regarding product needs or unavailability, vendor issues, and receiving concerns.About You Must have Serve Safe Certification & NYC State Food Handlers CardIntegrity and ability to multi-task and manage multiple projects simultaneously.Ability to strategically think, logistically plan and proactively problem solve.Knowledge of ordering and inventory systems such as CrunchTime, Craftable and similar programs.Strong Computer Skills in Microsoft Office (Excel, Word) and Email fort working in a fast-paced environment.Excellent organizational and problem-solving abilitiesExceptional communication and interpersonal skillsKnowledge of food safety regulations and best practicesExcellent verbal and written communication skillsAbility to work both independently and in a team environmentMust be passionate, entrepreneurial, and dedicated to successPhysical Requirements Ability to lift and carry items weighing 50 pounds on a regular basis.Ability to stand for prolong periods of time.Ability to move on foot to accomplish tasks, particularly frequent movements from place to place within the property.
