The Tin Building by Jean-Georges is a sprawling food emporium located inside one of New York's most historic landmarks. The Tin Building features multiple unique venues: Several full-service restaurants, fast casual, and counter dining outlets as well as 10,000 sf of retail featuring private label products, grab and go, grocery and more. To support this significant operation the Marketplace features a large commissary kitchen and bakery, as well as an exhibition kitchen that will provide media opportunities. Reporting directly to the Head Baker, the Baker Sous Chef will play a crucial role in our bakery operations, overseeing the production of high-quality baked goods and leading a team of bakers. Your expertise, attention to detail, and passion for creating delicious pastries and bread will contribute to the success and reputation of our baking program.What You Will DoLead and supervise a team of bakers, providing guidance, training, and support to ensure efficient and effective bakery operations.Plan and organize daily baking activities, including production schedules, ingredient preparation, mixing, shaping, proofing, and baking.Prepare and bake a variety of baked goods, such as bread, pastries, cakes, and desserts, adhering to recipes, quality standards, and established techniques.Monitor and maintain inventory levels of baking ingredients and supplies, placing orders as needed to ensure uninterrupted production.Ensure compliance with food safety and sanitation regulations, maintaining a clean and organized bakery environment.Conduct regular quality checks of baked goods, assessing taste, texture, and appearance to ensure they meet our high standards.Collaborate with the management team to develop and refine recipes, introduce new products, and improve existing offerings.Stay updated on industry trends, new baking techniques, and ingredients, incorporating them into our bakery's offerings.Implement cost-control measures, optimize production processes, and minimize waste to enhance profitability.Provide exceptional customer service by assisting customers, answering inquiries, and fulfilling special orders when necessary.About You A minimum of 4 years of experience as a Baker, in a lead or supervisory -depth knowledge of baking techniques, ingredients, and equipment.Strong understanding of food safety and sanitation practices.Ability to read and follow recipes accurately.Excellent organizational and time management skills.Attention to detail and a passion for creating high-quality baked goods.Effective communication and leadership skills.Ability to work collaboratively in a fast-paced team environment.Flexibility to work early mornings, weekends, and holidays as required.Physical RequirementsAvailability to work a flexible schedule, including weekends, nights, and holidays, as required.Ability to perform the essential job functions consistently safely and successfully with the ADA, FMLA and other federal, state, and local standards, including meeting qualitative andor quantitative productivity standards.Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state, and local standards.Moving about on foot to accomplish tasks, particularly frequent movements from place to place.
